CHEDDAR, SPINACH & MUSHROOM OMELET

INGREDIENTS

2 teaspoons extra virgin olive oil

3 ounces white button mushrooms, sliced

2 cups packed baby spinach

Sea salt, to taste

Handful of fresh parsley, chopped

6 large eggs, lightly beaten

4 ounces cheddar cheese, shredded

HOW TO MAKE CHEDDAR, SPINACH & MUSHROOM OMELET
Here are the step-by-step instructions for preparing cheddar, spinach & mushroom omelet,,, ready in just 6 simple steps!

In an 8-inch nonstick skillet, heat 1 teaspoon of oil over medium-high heat until shimmering

Add the mushrooms. Cook, shaking the pan a few times, until the mushrooms are golden, 3 to 4 minutes.

Stir in the spinach, and season with salt. Cook until just wilted, 1 to 2 minutes. Transfer the vegetables to a bowl. Stir in the parsley; set aside.

Heat the remaining teaspoon of oil in the same skillet. Season the eggs with salt and pour into the pan. Cook, without disturbing the eggs, until the edges are set.

Using a rubber spatula, lift underneath the edges of the egg while tilting the pan so any uncooked egg can slide underneath and cook.

Cover one half of the eggs with the vegetable mixture. Sprinkle the cheese on top. Fold the plain egg over the half with the vegetables, to create a half moon. Cook for 1 minute more. Serve immediately.
