CABBAGE SOUP WITH SAUSAGE

Hearty Cabbage Soup with Sausage is loaded with smoky kielbasa and healthy flavorful veggies. It's delicious and nutritious comfort food made in just 45 minutes!

       Nothing beats a warm bowl of soup on a cool evening. Of course, if you’re anything like me, I enjoy eating soup all year round! While most soup recipes can be a labor of love and take hours to prepare, this soup comes together rather quickly.

        Chock full of robust flavors from smoky sausage, tangy tomatoes and tender tasty veggies, this is a super satisfying one-pot meal. Not only is this a flavorful, stick to your ribs kind of soup, it’s also low carb, full of nutritious ingredients and a really great way to sneak a few extra veggies into your diet. It’s just one of those meals you can feel good about feeding your family.

INGREDIENTS

  14 ounces smoked kielbasa sausage, sliced
 ½ large head cabbage, shredded
 6 cups chicken broth
 ½ yellow onion, diced
 14.5 ounce can diced tomatoes, lowest carb
 1 carrot, sliced
 1 rib celery, sliced
 3 cloves garlic
 1 tablespoon tomato paste
 1 tablespoon olive oil
 1 tablespoon butter
 1 teaspoon dried thyme
 1 teaspoon salt, divided
 ¼ teaspoon ground black pepper
 Optional: pinch of red pepper flakes

INSTRUCTIONS

STEP 1
Heat a large pot or Dutch oven to medium and add in the olive oil and smoked sausage.
STEP 2
Sauté for a few minutes, or until they’re starting to brown, then remove and set aside.
STEP 3
Add in the butter and once melted, add in the onion, carrot, celery, half the salt and pepper. Sauté for a few minutes, the add in the garlic.
STEP 4
Sauté for about 15 seconds, making sure you don’t brown it, then add the sausage back in, along with the diced tomatoes, tomato paste, dried thyme, remaining salt, chicken broth and bring to a simmer.
STEP 5
Turn the heat down to medium low and add in the cabbage. With the lid slightly offset, simmer for 35 minutes or until the celery, carrots and cabbage are tender.
